The more, that the season for fruit started and you have to make room for fresh inventory. About this cheesecake I thought from the moment, when done Strawberry cheesecake. So it was high time to translate thoughts into action. Cheesecake, and in principle it is rather jogurtownik, is very light, makes it ideal during hot weather. Ideal for those on a diet (and how to skip the bottom, and up cheesecake, to już w ogóle super light), because it is made of 3,5% yoghurt and a very small amount of fondant, which can also be converted to yogurt. Ingredients for the bottom:
- 200g any biscuits (me dry sponge)
- 2 teaspoon cocoa
- 70g butter
Biscuits crush Blender, add cocoa and mix. Melt butter, connect with crushed biscuits so, that was “wet sand”.

Ingredients for cheesecake:
- 600ml thick yogurt greek type
- 150ml double cream 30% (You can substitute yogurt)
- 2 teaspoon vanilla extract
- 3 – 4 tablespoons of sugar (or more, depending on your preference)
- 2 tablespoons lemon juice
- 4 heaped tablespoons gelatin
- 1/4 cup of hot water
- 3 cups blueberries
Wash berries, disguise and blend mousse. Dissolve gelatin in 1/4 cup of hot water. All other ingredients in a mixing bowl and gently mix, then pour a stream of gelatin and mix together until smooth. Dough is chilled pour on the bottom of the biscuit. Place in the refrigerator to the concentration, preferably overnight.
Cream:
- 250g mascarpone
- 150ml double cream
- tablespoon icing sugar
- ca. half a cup of berries
All the ingredients mix together to give a fluffy cream. Put on cooled cheesecake, align, decorate with berries.
