The last hot days much everyone gave a misery. It's hard to work, hard to even think in such hot. And what to speak of baking. What to do, when it comes irresistible craving for something sweet, Spread some delicious? Well, like what? Best on the day will be a cake without baking! Refreshing, not too sweet, without unnecessary frills but with a delicious blueberry and jelly. This is the cake I made up myself. It worked better than I expected this.
Cheese cake is made of curd, So consistency is more like a baked cheesecake. And although personally I do not like cold cheesecakes, This ate it with great relish (and even I reached for good measure 🙂 ! ). I recommend you very much!

This is my own recipe.

Vanilla cheesecake cold

Ingredients for the bottom:

  • 120g biscuits (used up old sponge cake)
  • 60g butter

Biscuits crush Blender. Dissolve butter and mix with cookies, that was “wet sand”.
The bottom of the springform pan with a diameter of 22cm parchment paper for baking. Put the prepared mass Ciasteczkowa, align and tighten. Put in the fridge while preparing the cheese.

Cheese mass:

  • 650g curd three times minced (can be wiaderkowy, but it must be true curd, otherwise it will come out good cheesecake, but will not have the consistency, I use “My favorite”)
  • 250g mascarpone
  • 150ml double cream
  • 120g of icing sugar
  • Laski z ziarenka wanilii
  • 1 1 teaspoon vanilla extract
  • juice of half a lemon
  • 200g blueberries
  • 3 tablespoons gelatin

On top of cheesecake:

  • 2 jelly flavored with fruits of the forest ( or any other, at the discretion of)
  • large handful of blueberries

All the ingredients for cheesecake, in addition to gelatin and blueberries put in a mixer bowl and mix together until smooth.
Dissolve gelatin in 1/4 a glass of hot water and mix thoroughly. Cool slightly. Well, that gelatin was the same temperature as the mass of cheese, then they will not do for the “kluchy”.
A small stream poured into curd, mixing all the time , at low speed. Finally add the blueberries and mix thoroughly but gently.
Prepared mass translate into chilled bottom of the biscuit, align. On top of arbitrarily arranged blueberries. Cake tin with cheesecake hide the refrigerator while preparing jelly.

Jelly dissolved in 0.5 l of hot water, Cool and then refrigerate. When the jelly begins to harden (for me it was about half an hour) I gently pour on top of cheesecake.
Active chill in the refrigerator for several hours or preferably overnight.

The best cheesecake I ate cold so far – perfectly creamy, delicate, waniliowy… Simply ideal!!! I added blueberries instead of the usual, remembering that they are dry and not mix them too hard – komponowa pretty good 🙂

My ukrojony piece looks always so (not only cheesecake cold), like it chopped off with an ax or possibly trimmed bread knife. I do not think I will understand the secret data perfectly sliced ​​pieces, maybe in the next life!
