Plums, plums, everywhere plums. And I love them. I think my neighbor knows, I recently gave me (not for the first time) a large plastic bag of these delicious fruits. It's probably in gratitude, for the last cake with plums🙂 overeat them I can not, but the next batter has long been asking myself. More specifically cheesecake. Because I'm baking cheesecake is like magic. This is something I will do my, I'll throw something and always comes out great cake. Do not stick to the provision, because all of my cheesecake is different. This is delicious, at the bottom of almonds, with plums on top, sprinkled with almond flakes. Not the cream cheesecakes, is rather compact, but with a very smooth and pleasant to the palate consistency. He came out great and in good conscience recommend it to you!
This is my own recipe.
Components of the bottom biscuit:
- 150g any cookies with chocolate (in my cereal)
- 70g ground almonds
- 60g butter
Cookies crumble into fine crumbs, Melt the butter. Mix cake with almonds and melted butter so, that was 'wet sand'.

Cheese mass* (all the ingredients in the cheese should be at room temperature):
- 1 kg curd, ground at least twice, can be of good quality cheese wiaderkowy (I used "My favorite’ from Wielun)
- 1 vanilla pudding (powder)
- 4 spoonfuls of thick cream (I used 18%)
- cup sugar
- 1 almond sugar (If you do not have, add the vanilla and a few drops of almond oil)
- 5 eggs
Additionally:
- about 300g plums (depending on the size of plums)
- 80g flaked almonds
Wash plums, cut in half and remove the seeds and dry. Allow.
All the ingredients for the cheese, in addition to eggs, place in a bowl mixer, blend together smoothly, then add one egg, mixing thoroughly after each. Do not mix long curd, so much did not aerate. Remove the cake tin from the fridge and pour the cooled mass at the bottom of the biscuit. On top lay a plum, sprinkle with almonds.
Bake in oven at 180 ° C for the first 15 minutes, then reduce temperature to 150 ° C and bake for about 1 hours, or more. The center of the cheesecake should be beheaded. After this time, turn off the oven, repeal the door and leave the cheesecake to cool completely. Then, remove from oven and put in the refrigerator for several hours or preferably overnight.
*I used cheese which has a high fat content (ca. 26g), So I did not add butter, but if you use cheese and low-fat, you need to add 100g of the cheese melted and cooled butter.

I did ,pychotka! I modified a bit because I forgot to buy me almonds and at the bottom were walnuts, and the curd added a bit of Amaretto:)
