This bread was spotted in Domi and so strongly acted on my senses, that there was no exit and I had to bake it. My imagination prompted me, that the bread will be perfect in taste and are not disappointed. He came out exactly the, as I imagined. The soft pulp and super crispy crust. And I liked the little dziureczki. Perfect. It is true that some labor-intensive, but the taste will reward you all the hardships. I'll just add it to the already long list of my favorite breads:) I recommend a very!

Chleb codzienny na zakwasie / Sourdough bread daily

Leaven (400g):

  • 50g rye sourdough
  • 180g of rye flour (type 720)
  • 170g of warm water

Prepare the leaven 3 stages (because it is quite extended in time, I propose to start about an hour 15):

  1. Stir with a rye sourdough 50g 60g 60g rye flour and warm water and let stand, covered in a warm and shady place 5 – 6 hours.
  2. After this time, add 60g flour 50g rye flour and warm water and allow to stand again but this time on 8 – 12 hours.
  3. In the last step to add 60g flour 60g rye flour and warm water. Let stand covered for 3 hours. During this time the leaven should significantly increase its volume.

Ingredients for bread:

  • 400g of the finished grout
  • 100g of rye flour (type 720)
  • 100g cake flour
  • 200g of wheat flour
  • 150ml of warm water
  • 1,5 teaspoon salt
  • 1 teaspoon of sugar
  • 10ml of vegetable oil

Mix all ingredients together, knead by 5 minutes. Allow the cake to 20 minutes, to odpoczęło, after that time to knead the next 5 minutes.

Shape into a loaf and place in a tightly wysypanego flour bread basket to grow. I've put immediately into the mold. Let stand, covered in a warm place, to double in volume (for me it took less than 3 hours).
