Ingredients for the shortcrust pastry:
- 1,5 cup butter
- 4 glass (250ml) of flour
- 1 teaspoon of baking powder
- 1 glass granulated sugar
- 6 yolks
- 2 spoonfuls of thick cream (I used 18%)
For mixing bowl sift the flour, sugar and baking powder, Add chopped butter and stir it, for making pellets. Then add the egg yolks and cream and knead the dough. Prepared dough into two parts in the proportions 2/3 and 1/3. Wrap in foil and chill in the refrigerator for several hours. I I put in the freezer for 1 hour.
Filling:
- ca 2 kg sour apples (in my russet)
- 4 tablespoons of water
- 3/4 glass of sugar (gave brown)
- 2 teaspoon cinnamon
- 2 heaped tablespoons of potato flour
- 3 tablespoons lemon juice
Peel the apples, remove seeds and cut into chunks. Put them in the Blackbuck, cover with water, Pour sugar and cinnamon and simmer about 15 minutes under cover without stirring. Dissolve cornstarch in lemon juice and pour the apple. Stir and cook for 2 minutes. The mixture should be thick and the apples, non-dissolved.
Foam:
- 6 egg white

- pudding (powder, in my vanilla, 40g)
Whip egg whites to stiff peaks, at the end of whipping gradually add sugar, whisking all the time. At the end of pudding mix and mix thoroughly.

Frequently We make jelly with orange flavor. After baking is a nice taste of cider. I have a question – what is the foam after baking – pulling or so fragile as meringue??? I found a recipe somewhere sometime, że do “bezy” pouring oil. I want to bake a cake today for tomorrow and I do not know, how to keep this layer of foam.
