Spring is the time orders. At home, in the garden and in our freezers :). It was during such orders are created coolest, because spontaneous treats. In my freezer I found a red currant, raspberries, strawberries and blueberries. About the latter, I forgot completely. And what more than a quick cake, suitable for these delicious fruits?! All the ingredients for this cake probably always be in every home, So cleaning your freezer and pieczcie! Cake easy, fast and fun. Perfect for afternoon tea. I always associate with childhood will. You can use any fruit and will always be tasted delicious! I recommend you very much!

Sponge cake with fruit

Ingredients:

  • 2 glass of flour
  • 1 cup of potato flour
  • heaped teaspoon of baking powder
  • 3/4 glass oil
  • 3/4 glass of sugar (dough is not sweet, as someone likes more sweet pastries, This can add more)
  • spoon of vanilla sugar
  • 2 teaspoon vanilla extract
  • 5large eggs
  • ca. 400g small fruits

Whisk eggs with sugar and vanilla sugar and extract to the light and fluffy, then slowly pour, oil all the time mixing. When you combine the eggs with the oil, gradually pour the sieved flour, baking powder, gentle stirring.
300g of fruit sprinkle with flour. Make the dough very gently stir the whole.
Plaque size 25x25cm baking parchment paper, translate into the prepared cake. On top sprinkle the remaining fruit.

Bake in oven preheated to 180 ° C for about 45 minutes. Do not bake too long, because the cake comes out too dry, therefore you need to check the stick, if the cake is ready. After this time, remove from oven and cool in the lamina, then remove and cool on a wire rack. Once cooled, sprinkle with powdered sugar cake.

Definitely too much flour….The dough does not rise. It was a waste of ingredients.

Hell already twice – first with butter (One cube melted and przestudzona) and canned peaches, and the other of the oil and frozen fruits of the forest (premixed, to buy in any supermarket) 🙂 In both cases, the cake came out sensational 🙂 highly recommend and thank you for the recipe 🙂

Very nice recipe and I'd like to try it out. My only question: the importance of adding oil to the dough instead of butter / margarine? Is it possible to use them instead of oil, and if so, in what quantities? Regards 🙂
