Thanks goodness and sincerity neighbor, I came into possession of large bowls of delicious raspberries, So I decided to fix that little oversight, and now I can be proud of, that this delicious cake is on my blog too ;-). And there is nothing to brag about, because the dough is really excellent. Very fragile, delicate, with a light foam and lots of fruit puddings. Not too sweet. At the same time,. The recipe comes from the blog My Pastries.
Ingredients for the shortcrust pastry:
- 2,5 glass* of flour (I gave "krupczatka" - this polish kind of wheat flour)
- 250g cold butter or margarine (I gave butter, because it will)
- 2 teaspoons of baking powder
- 3 tablespoons granulated sugar
- 5 yolks
Mix the flour with the baking powder and sugar, add egg and diced cold butter. Knead the dough quickly. Divided into two parts in the proportions 60% and 40%. They tell some wrap in foil and freeze.
Measuring 25x30cm baking tray with parchment paper for baking, wipe off most of the dough, hand lightly, aligning surface. Bake in oven preheated to 190 ° C for about 20 minutes, until golden brown. After this time, remove from the oven and leave to cool completely.
Foam pudding:
- 5 egg white
- cup caster sugar for baking
- 16g of vanilla sugar (I gave a teaspoon of vanilla paste)
- 80g of vanilla pudding (powder)
- 1/2 cup of sunflower oil
Additionally:
- about 0.5 kg of raspberry fruit or other favorites
- powdered sugar for sprinkling dough
Egg white with a pinch of salt beat stiff. At the end of whipping add lots of sugar and vanilla sugar, whisking constantly. Then add pudding mix and continue. At the end of the stream of oil spill, still mixing.
The finished foam is put on the bottom and cooled podpieczony, align. Arrange on top of raspberries or other favorite fruit, pressing them lightly into the foam. Wipe off the remaining fruit on the cake.
Bake at 190 ° C for about 40 minutes. After this time, remove from the oven, cool, Sprinkle with powdered sugar.

I made a version of the cake with berries 🙂 came out perfect – disappeared within a few hours only question I have 🙂 – ubiłam pianę, dodałam cukier, budyń i na końcu partiami dolałam olej. I w tym momencie piana jakby opadła, ale konsystencja była gładka. Czy tak miało być, czy za szybko go wlewałam?
Piana nie powinna opaść. Possible, że jednak zbyt szybko wlewałaś olej.

The recipe is so simple once explained that I was ready for baking. There is still warm, but cut a piece-revelation! I love shortbread dough, I highly recommend and thank you for the recipe! I should add that I used raspberries instead of apples with walnuts and a little cinnamon.

I have no idea why falls 🙁 can survive thermal shock? Try turning off the oven, repeal the door and remove the dough after a moment, for 5 – 10 minutes. Maybe this helps…

I used a forest of frozen fruit (raspberries, blackberry, blueberries, cherries, -currents black and red), not rozmrazalam before baking and wyszlo perfectly. I think of the thawing is redundant.

Today, the second time I bake this cake, is great!:) Recently the absence of other fruits gave a can of peaches and it was ok, and now blueberries and fresh peaches. And instead of oil added a package of mascarpone, which I love and it tastes really perfectly:) Thanks in recipe!!!

This cake is wonderful!!! I did it already with all the possible fruits and all tastes wonderfully 🙂 My favorite versions: with blackcurrant and apple and blueberry with raspberry and strawberry. With cherries and chocolate pudding tastes not my mother-in-🙂
