I will be brief – delicious! Chocolate sponge cake and coconut mass superior to all mass toffee with nuts. As for me, very accurate and tasty combination. Toffi z kokosem | Toffee with coconut cake

Ingredients for the sponge:

  • 6 large eggs (separate the yolk and the egg white)
  • 1 1/3 glass caster sugar *
  • 10 tablespoons oil
  • 10 tablespoons of water
  • 1,5 glass of flour
  • 3 tablespoons of cocoa
  • 1 teaspoon of baking powder

Beat egg whites until stiff, at the end of churning add the sugar in batches. Then add egg yolks turn, whisking thoroughly after each. Oh and add the water and mix. Sift the flour, baking powder and cocoa. Add weight and gently mix (I do it at the lowest speed mixer).

Measuring 25x30cm baking tray with parchment paper for baking, Pour the prepared mass and level the surface.

Bake at 175 ° C for about 30 – 35 minutes, dry swab, after that time, remove and cool. Cold halved. Top baked sponge cake the day before, Then it will be easier to slice. Put the coconut mass .

Weight coconut:

  • 3 glass of milk [250ml] (750 ml)
  • 350g desiccated coconut
  • 3/4 glass of sugar
  • 250g butter (I gave 200g)
  • 2 full tablespoons cornstarch

In a saucepan, bring to the boil 2,5 glass of milk [250ml]. In the remaining milk, cornstarch spread. To pour the boiling coconut milk, sugar and butter. Mix thoroughly, boil to dissolve the sugar and the butter. Pour the remaining milk with the flour and cook potato, with constant stirring, until the mixture begins to thicken.

Deck sponge inserted into the lamina, which was baked. Put weight on the coconut (hot), the second cover and press lightly.

Masa toffi:

  • 1 krówkowej weight of the finished box at room temperature (I used the weight of his favorite Gostyn, 510g tin)
  • 200g butter

Additionally:

  • 200g coarsely chopped walnuts

Mixer beat the butter on the bright and fluffy. Batch add weight krówkową, mixing all the time. The finished weight put on top of the other countertop sponge cake. If the weight you will be too thin, for a moment it must be put in the fridge, for light concentration. Then avoid 'runoff’ weight of the biscuit. Sprinkle toffee mass roughly chopped walnuts. When the cake has cooled down (Massage coconut) Put in the refrigerator and cool. Cake tastes best the next day.

*my glass = 250ml

Cake and I did several times, it is delicious. Both the mass of sponge cake and always go flawlessly. However, it is up to the sweet and I was thinking about some-breaking addition – perhaps a layer of raspberry jam or preserves? Maybe sprinkling alcohol sponge cake? Please comment:)

Delicious cake! Over, who does not like coconut stated, that this cake certainly do not type in the list of favorite cakes.. and, second,. Changed his mind after tasting. Cake glamorous and surprisingly not very labor-intensive 🙂 delicious taste, sweet, but not “mulaste” – such as cream pie should be 🙂 additional plus for the sponge cake – beautifully grown (certainly will use to other provisions). 🙂
